I cooked the most delicious dinner tonight and thought I’d share it. I cooked the same dish for some friends last week and they wanted the recipe, so here it is:
LENTIL COTTAGE PIE WITH STIR FRIED GREEN VEG
3 large potatoes and 2 sweet potatoes (could use a different ratio) – boiled and mashed
1 onion - diced 3 cloves of garlic - cut up small 3 sticks of celery - small thin slices 3 carrots - cut into small pieces FRY ALL TOGETHER FOR 5-10 MINS IN A SPOON OF PURE COCONUT OIL Add: Large spoonful of tomato puree - stir into mix in pan Tin tomatoes 1 tsp cumin 1/2 tsp cinnamon 1 tsp paprika shake of Worcester sauce shake of tabasco sauce (depending on how hot you like things!) Add 1/2 bag (250g) red lentils Enough water to cover and bring to the boil Cook for about 20 mins until lentils are cooked, KEEP CHECKING ADD ADDING MORE WATER AS NECESSARY! The lentils really suck up any moisture!! When cooked spoon into a large ovenproof dish, spoon over the mash Grate some seriously strong chedder on top - depending on taste Stick in the middle of the oven - high temperature, I did 200 on my fan oven. For 25 mins 5 mins before it's cooked heat some coconut oil in the wok Stir fry as much kale, courgettes, broccoli together, I also added a chopped chilli (I keep mine in the freezer and use them from frozen - cutting them up with a pair of scissors as I hate getting the chilli on my hands!) Put in a splash of soy sauce, I use a mix of dark and light. This will feed about 6 people, or if you're like me I keep it in the fridge and eat it for days!!
